Food Safety Training
Compliplus have created 4 different specific courses for each sector within the food industry. These courses have all been produced in accordance with the training standards as set out in the Food Safety Authority of Ireland Guide to Food Safety Training for Level 1 – Induction Skills and Level 2 Additional Skills. They are designed for food workers involved in the hospitality, food service, wholesale, retail, manufacturing, and production sectors. These courses are broken into the following areas:

Why Food Safety?
Employees should receive appropriate resources and motivational support from management to apply the knowledge acquired during this course. So, before we start, let’s look at what food is and what food hygiene means. The definition of food includes drinks, ingredients, and finished food products. Please note, food or drinks that are provided either free of charge or for profit must be fit for human consumption and must meet food safety requirements.
Food Hygiene may be defined as: all the practical measures involved in keeping food safe through the various stages of production to the point of sale or consumption. Ireland’s food Industry is our largest source of employment and as such has a significant influence on our economy. Activities within the food industry can be as diverse as harvesting, packaging, preparing, delivering, receiving, storing, cooking, displaying, transporting, serving and includes cleaning activities associated with any of the roles I’ve mentioned.

FOOD SAFETY
Course Modules
This course is designed to provide you with the knowledge, skills, and awareness to comply with safe food standards, that can equally be applied at work or at home. The course is divided into 8 modules, which are;
1. Food Legislation – Licencing, Responsibilities and Environmental Health Officers
2. Contamination Types and Causes
3. Personal Hygiene Awareness and PPE
4. Workplace Cleanliness, Maintenance and Waste Management
5. Food Pests and Workplace Control Measures
6. Food Allergens
7. Safe Food Practices, and finally
8. Hazard Analysis Critical Control Point Systems
Upon successful completion of the training the certificate is available for download. In accordance with Irish legislation, an abrasive wheel certificate last for 3 years.
To appeal to various learner types and improve focus, this course is designed to be interactive where possible with aims and learning objectives outlined at the beginning of each module. Your understanding of objectives will be checked and reinforced by a series of games or tasks at various key points throughout. Some modules are broken down into specific sections to make the information more digestible, but each completed module will end with a brief test which cumulatively, will account for 40% of your overall mark.
Food safety legislation that applies in Ireland originates from EU directives. The food safety legislation is comprehensive and deals with various aspects of food safety. In this course we are only going to outline the specific legislative requirements relating to food establishments and food handlers. There is no need for you to be aware of the exact wording of legislation, which changes from time to time. All that you need to know are the general principles of the legislation, which we will outline for you. Food Safety Legislation requires that every person working in a food-handling area must:
- Follow procedures and Safe Food practices as instructed
- Perform any checks required and record results as part of a safe food system
- Cooperate with their supervisors and/or Environmental Health Officers
- Maintain a high degree of personal cleanliness, and finally
- Wear suitable clean, and if necessary, protective clothing
Requirements regarding personal hygiene will be explored in more detail later in this course.
